Laura, I love this tip! Roasted veggies are absolutely delicious!! I have moved to almost 100% raw vegan diet which has absolutely transformed my health over the last 5 years. It sounds extreme and it is but nothing has come close to giving me the results I get from this way of eating. I almost entirely eats fruit and veggies with a little nuts and seeds (in various forms) thrown in. My dinner salads have about 25g of protein when you calculate all the protein in the greens and veggies together plus some nuts and seeds usually in the form of a raw ingredient dressing. Which gets me to my tip for anyone on any diet to get more veggies in. DIP! I make a raw cashew ranch that is delightful (and full of nutrients in itself) and I can eat 1/2 of a head of cauliflower in one sitting with that. I didn’t know this before transitioning to raw, but a lot of nutrients are lost with heat. Still super good for you, but even more nutrient dense raw. This is a great way to add in raw veggies too! Guacamole is another great dip! Cheers to veggie eating! They are God’s gift to us for sure!
I love this too! My current mode is a couple of things. Right now I am focusing on batching a weekday lunch that is full of veggies. This week I did a really tasty red lentil soup that had spinach (I used frozen), butternut squash, carrots, onions and zucchini. So yummy and not a huge commitment to make a pot of soup. It's mostly just the chopping and a bit of time to sautee everything before adding the liquid. The other thing I do is i often will sneak some veggies into a non-veggie dish. Lots of recipes call for an onion but a sloppy joe or taco meat can easily handle a cup or two of grated zucchini without anyone noticing when there's sauce and the veggie is basically undetectable.
For a while when I was working at home more I would batch up some sauteed veggies - think a sweet onion, some grated zucchini (this is a go-to for me, clearly), spinach, maybe some leftover asparagus, cherry tomatoes, etc and then put that in the fridge. Then each morning i could make myself a two egg omelet where i would add some of these veggies and the goat cheese crumbles to make a delicious veggie-full breakfast. It also felt kind of decadent on a weekday morning which is also nice but didn't take up all that much time.
I am super keen that eating more veggies doesn't have to be boring and it is also delicious! So many amazing and tasty foods can also be nutritious.
Agree that many veggies can be worked into dishes that can handle them. I throw whatever we have into pasta sauce sometimes. A little spinach adds some green and is pretty tasteless...
As a caregiver, I eat many meals in my car. The late afternoon, heading into rush hour energy crash used to result in a trip through the fast food drive through (french fries are technically produce but...). Now I keep a supply of fruit bars (like Solely, with only fruit, no sugar or anything else) in my car. A whole serving of fruit and no bad stuff.

When I’m working from home, I make an egg scrambler with peppers, onion, and egg. Onions count as a vegetable, right?
