Laura - I try to eat 2 fruits for bfast, a fruit and veggie for lunch and 2 vegetables for dinner. I have been doing this for a while and it is easy to remember. Not 100% perfect yet but do accomplish this many days.
This is a great resolution! I’ve been doing this for over a year and it’s not difficult to keep up with, especially if you don’t mind eating the same thing most of the time. How I do it: I eat the same breakfast every weekday unless something like travel or a lapse in grocery runs throws it off. Over the past year or so, I would say I’ve eaten the following most days of most weeks and found it to be easy, delicious, and packed with good stuff:
Greek yogurt like Chobani or Oikos Triple Zero
One scoop of vanilla protein powder mixed in
Chia seeds
Frozen wild blueberries
Handful of regular blueberries
5-7 blackberries
2-3 strawberries, quartered
Handful of walnuts, lightly broken up
I call it my berry bowl. I keep the wild blueberries frozen to last longer and use the same scoop size as the protein powder for those.
I’ll pair it with black coffee and sometimes a protein drink for an extra boost of prolonged energy and focus.
This gets me roughly three servings of fruit, good fiber from the walnuts and chia seeds and 30-40g of protein if I do the shake and/or a protein fortified yogurt for the base.
My husband and I are going to do the Whole 30 in January so no yogurt, but I plan to stick with the berries, nuts and seeds in the morning as a side dish with some eggs.
After listening to Best of Both Worlds goal podcast this morning this is the goal that really stuck in my mind. I need more produce in my life and this feels doable!
I have a good skin care routine in the morning but my night skincare routine is abysmal/non-existent (I know, I know…) I’ve been able to get by with pretty good skin but now that I’m in my mid-30’s it’s time to get more serious. So my resolution is to wash my face and do the rest of my skincare routine every night. And my husband wants to join in too! Should be good for both of us.

I sauté veggies in Sunday and add them to my scrambled eggs each morning. Great way to get veggies in!!
